Opening its doors in 1907, The Plaza Hotel remains an iconic New York institution. The Plaza was a favorite of F. Scott Fitzgerald and his wife, Zelda. He spent so much time at the Hotel that is friend, Ernest Hemingway, suggested he "leave his liver to Princeton [his alma matter] and his heart to the Plaza." Fitzgerald mentioned the Hotel in his acclaimed novel, The Great Gatsby.
